FUEL Evaluation
Participation
The percent of students participating in the pilot program will be calculated daily by dividing the number of students purchasing school meals by daily student attendance. The percentage of participation will be compared to the previous year and to the percentage of participation at the control school.
Surveys
Children, parents, school staff/administration, and cafeteria managers will be surveyed to assess their acceptance and approval of the pilot program. Children, parents, school staff/administration, and cafeteria managers will also be surveyed at the control school to obtain information regarding the acceptance and approval of the existing district cafeteria program.
Nutritional Quality
Nutritional quality of school lunches from the intervention and control school will be averaged for each week. Averages will be calculated for each of the following nutrients: total calories, carbohydrates (in grams and as a percentage of total calories), total sugars, total fat, saturated fat, monounsaturated fat, polyunsaturated fat, protein, cholesterol, fiber, vitamin C, vitamin A, sodium, calcium, and iron. After computing the weekly averages from the pilot program and control school for one rotation cycle, the weekly averages will be averaged for both the pilot and control school and compared.
Cost
A comparison in cost will be made between the pilot school and the control school.
